Chicken Breast Cooked in Cider

Ingredients

4 Chicken Breast boneless, skinless halves
1/2 teaspoon Salt
1/4 teaspoon Black Pepper ground
1 tablespoon Butter
1 tablespoon Olive Oil
2 tablespoons Onion finely chopped
1 tablespoon Flour all-purpose
1 cup Apple Cider
1 1/2 teaspoon Lemon Juice
1 tablespoon Parsley fresh, chopped

Steps

Step 1

Dry chicken with paper towels.

Step 2

Sprinkle with salt and pepper.

Step 3

In large pan, heat butter and oil over medium-high heat until butter is melted and hot.

Step 4

Add chicken, cook 3 to 5 minutes or until browned, turning once.

Step 5

Remove chicken from pan and place on platter.

Step 6

Reduce heat to medium.

Step 7

Add the onions; cook until softened.

Step 8

Stir in flour; cook and stir 1 minute.

Step 9

Stir in cider until smooth, scraping up browned bits from bottom of pan.

Step 10

Add lemon juice and mix well. Return chicken to skillet; reduce heat to low.

Step 11

Cover; cook 3 minutes or until chicken is no longer pink in center and juices run clear, turning once.

Step 12

Sprinkle with parsley.

Step 13

Serve with freshly steamed French beans and baby potatoes.
