Chicken & Vegetable Tagliatelle

Serves 6

Ingredients

450g Chicken Breast boneless, skinless
3 tablespoons Olive Oil extra virgin
300g Tagliatelle
3/4 cup Broccoli
3/4 cup Cauliflower
3/4 cup Carrot
12 Cherry Tomatoes
2 tablespoons Lemon Juice

Steps

Step 1

Cut up chicken into small strips.

Step 2

Heat pan on medium heat with 2 tablespoons olive oil.

Step 3

Add chicken to pan and cook until done.

Step 4

Cook tagliatelle in boiling water for five minutes.

Step 5

Dice carrots, broccoli and cauliflower to bite-size pieces.

Step 6

When chicken is cooked, add broccoli, cauliflower, carrots, tomatoes and lemon juice, cover and cook for a further five minutes.

Step 7

Add drained pasta to pan and then add 1 tablespoon olive oil and stir.

Step 8

Serve immediately.
